Ingredients
- 1 (16 oz.) French or Italian bread loaf, cut into 1/2" cubes
- 1 cup Canadian bacon - finely chopped
- 1/4 cup jarred roasted red pepper - chopped
- 1/4 cup green onions - chopped
- 1/2 cup parmesan cheese - fresh, grated
- 1 (14 oz.) can diced tomatoes with basil, garlic and oregano
- 1/4 cup black olives - chopped (optional)
- 1 cup mozzarella cheese - shredded
- 6 eggs - large
- 3 cups milk
- 1 teaspoon Italian seasoning - dried
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup parsley - fresh, chopped
Directions
Arrange bread cubes insingle layer on large baking sheet. Let stand 8 hours to
dry.
Spread half of the bread cubes in a lightly greased baking dish, sprinkle
Canadian bacon, red pepper, green onion and
parmesan cheese evenly over bread cubes.
Arrange rest of the bread cubes evenly over the parmesan cheese and top with
tomatoes, olives (optional) and mozarella
cheese.
Whisk together eggs, milk, Italian seasoning, salt, pepper and parsley.
Pour egg mixture evenly over bread cubes, pressing down cubes gently to absorb
liquid, cover and chill 8 hours.
Bake at 325° F for 55 minutes or until set and top is browned.
Let stand for 10 minutes before serving. |
