Ingredients
- 1 hard flatbread, 12 to 14 inch diameter
- 3 tablespoons olive oil, divided
- 1/2 cup kalamata olives, pitted
- 1 1/2 cups mushrooms, sliced
- 1 sweet onion, chopped coarsely
- 8 ounces mozzarella or swiss cheese, shredded
fresh basil leaves
salt and pepper to taste
Directions
Preheat oven broiler.
Add 1 tablespoon of oil to a large skillet. Over medium high heat, sauté onions
and mushrooms until light and golden brown,
appproximately 10 minutes.
Slice olives, remaining mushrooms, onion, and cheese into small pieces.
Place flatbread on baking sheet and brush surface with 2 tablespoons of olive
oil. Randomly place topping ingredients on the
surface of the flatbread, placing the pieces of cheese on last. Salt and pepper,
as desired.
Place flatbread on the middle oven rack. Lightly melt cheese over other
ingredients and remove when fully melted,
approximately 5 minutes. Garnish with basil leaves.
Serve whole and allow pieces to be broken off for servings. |
